Dandelion

To many landowners the dandelion is little more than an annoying weed; however, not only has it historically been used for its medicinal virtues it is also good to eat. Eating dandelion greens in the spring was once common practice and was considered one of the best detoxifying herbs. It is versatile in the kitchen and the leaves can be used in salads, sandwiches or lightly steamed and serve with butter and lemon. The flowers are also edible. When pulled apart the bright yellow petals can be added to salads or made into cookies.


Dandelion Cookies

  • ½ cup dandelion flowers (yellow petals only no green parts)

  • ½ cup coconut oil or butter

  • ½ cup honey

  • 2 eggs

  • 1 cup flour

  • 1 cup oat flakes

  • Sunflower seeds

  • Mix all ingredients together and bake at 375 for 10 to 15 minutes
